the broth is much darker than normal though. I assume that is from the shitake mushrooms?

It definitely is. I guess you can say that, but I think it's mostly because I was a bit too generous with the soy sauce.

I'll keep that in mind. At least it looks much easier and faster to make then the beef broth kind. I'm still adding tendon to it though.

Yep, you won't need to simmer the marrow or whatnots for eternity for this. I recommend adding oxtail (if you like), amazing flavours.
